How to make Bihari style Sattu Paratha (How to Make Bihari cuisine Sattu Paratha)

Material
Wheat flour – 2 cups
Sattu – 1 cup
Ginger (grated) – 1 teaspoon
Garlic (crushed) – 1-2 cloves
Green chillies (finely chopped) – 2-3
Onion (finely chopped) – 1
Green coriander (finely chopped) – 2 teaspoons
Lemon juice – 1 teaspoon
Ajwain – 1/2 teaspoon
Cumin seeds – 1/2 teaspoon
Mustard oil – 2 teaspoons
Salt – as per taste
Water – as per requirement
Oil/ghee – for frying the parathas

Method of Preparation: First of all, take wheat flour in a big vessel and add some salt to it and knead a soft dough by adding water slowly. Then cover the dough and keep it for 15-20 minutes.

Now put sattu in a vessel and add finely chopped onion, ginger, garlic, green chilli, green coriander, celery, cumin, salt, lemon juice and mustard oil and mix it well with hands.

Now add some water and mix it well to make it soft. Keep in mind that the mixture should remain dry. So do not add too much water to it.

Now make small balls of the kneaded dough and fill 2 to 3 spoons of sattu masala in it. Now carefully close the dough from all sides and lightly roll the paratha with the help of a rolling pin.

Heat the pan and put the rolled paratha on it. Now add oil or ghee and fry it on both sides till it becomes light golden. When the paratha becomes crispy and golden, remove it from the pan and serve it hot.
